1⁄2 cup pitted kalamata olives

1⁄2 cup pitted black olives (use canned; drain and rinse)

1⁄2 cup plus 2 tbsp toasted walnuts

1/4 cup fresh parsley, chopped

2 - 3 tbsp extra-virgin olive oil

1 1⁄2 - 2 tbsp freshly squeezed lemon juice

1 small clove garlic

1 - 2 tsp fresh thyme, chopped

1 tsp Dijon mustard

sea salt to taste

freshly ground black pepper to taste
