Ingredients for 4 servings

1 tsp fish sauce

1 tsp brown sugar , any type

basmati rice , to serve

1 lime , cut into quarters

whole chicken , about 1.8kg

2 tbsp unsalted peanuts , crushed (optional)

200.0g green beans , trimmed

400 ml can coconut milk

two thumb-size pieces root ginger

1 stick lemon grass , bashed with a rolling pin

1 tsp olive oil

450.0g baby new potatoes , any larger ones halved

70 g pack Massaman curry paste (I used Blue Elephant)
