1/4 cup Oil

salt and pepper

2 large ripe, heirloom tomatoes

1 x ripe avocado, cut into small chunks

1 small purple torpedo onion, finely sliced

1 x fresh buffalo mozarella, thinly sliced

1 handful fresh basil leaves

2 tbsp Red Wine Vinegar

2 tbsp Sherry Vinegar
