1/2 cup chicken stock

1/2 cup butter , softened

1 cup buttermilk

1 1/2-2 tablespoons kosher salt

2 cups crumbled blue cheese (about a pound)

2 1/4 cups cornmeal

1/4 cup jalapeno, seeded and diced (2 large jalapenos)

1 egg , beaten

1/4 cup flour

2 cups fresh corn kernels (frozen is fine)

black pepper , freshly ground (to taste)

4 garlic cloves , minced

6 tablespoons sugar

Additional ingredients to make the dressing

1 teaspoon baking powder

1/4 cup butter

Cornbread

2 eggs , beaten

2 cups red onions , peeled and chopped
