Ingredients for 4 servings

1/4 cup extra virgin olive oil

1 medium onion, cut into 1/4 inch dice (or enough tiny onions to equal about 1 cup diced)

3 medium-sized beets, peeled and cut into 1/4 inch dice (about 2 cups)

2 arborio rice (or 1 cup cup pearl barley)

1/2 cup dry white wine

6 cup chicken stock, heated over medium heat

4 tbsp unsalted butter (1/2 stick)

1/2 cup freshly grated parmesan cheese

1/2 cup walnut halves, toasted, for sprinkling on top
