1/2 tsp salt

1/4 C + 2 tbsp 2% greek yogurt

1/4 C chopped fresh parsley

1 egg yolk, beaten

1 tablespoon dijon mustard

1 tbsp freshly squeezed lemon juice (from 1/2 lemon)

3/4 C + 2 tbsp panko (we used Progresso) or bread crumbs

3 scallions, minced

1/4 tsp freshly ground black pepper

1/4 C canola oil
