Ingredients for 12 servings

4 teaspoons extra-virgin olive oil, or canola oil, divided

1 clove garlic, minced

1 1/2 cups chopped onion, (1 large or 2 medium)

1 1/2 cups diced red bell pepper, (1 large or 2 medium)

3-4 cups reduced-sodium chicken broth, or vegetable broth

1/4 teaspoon salt

1 teaspoon dried thyme leaves

1 3/4 cups quick-cooking or pearl barley

4 cups spinach leaves, thinly sliced

Freshly ground pepper, to taste

1 tablespoon balsamic vinegar, or to taste

12 ounces assorted mushrooms, (cremini, shiitake and/or button), wiped clean, trimmed and sliced (4 cups)
