2 tablespoons extra virgin olive oil

1/3 cup minced onion

2 garlic cloves, minced

Pinch hot red pepper flakes

1/2 pound mixed mushrooms (remove gills from portobellos, if using), halved and thickly sliced

1 teaspoon minced fresh thyme

1/4 cup white wine

1 1/2 cups coarsely chopped canned tomatoes

2 tablespoons minced Italian parsley

1/3 cup heavy cream

Salt to taste

3/4 cup freshly grated Parmesan cheese
