Ingredients

Tartar Sauce:

1 1/2 cups mayonnaise

5 tablespoons chopped sweet pickle

5 tablespoons drained and chopped caper berries or capers

1 tablespoon fresh lemon juice

1 teaspoon dried dill

Fish Sticks:

2 1/2 cups breadcrumbs, preferably panko (see note)

1 1/4 teaspoons dried dill

1 1/4 teaspoons table salt + salt to taste

1 cup unsalted butter, melted

4 pounds halibut or other firm white fish, in large pieces, skin and pinbones removed

Pan spray or oil mister, preferably with olive or canola oil

Lemon wedges
