Ingredients for 2 servings

2 cups brussel sprouts

1 1/2 cups red potatoes, cubed

1 bunch fresh dill

2 tangerines, temple oranges or sweet citrus

1 large white onion

1-2 Tbsp olive oil

2 Tbsp lemon juice

1 Tsp garlic powder

1 tsp salt

2 tsp black pepper

1 Tbsp dijon mustard

2 Tbsp vinegar (any variety)

1/4 cup vegetable broth

2-4 vegan cheese slice singles, (I only used 2 slices, but you can use more.)
