4 tsp olive oil

2 large yellow onions

2 tbsp granulated sugar

1 small jalapeno, thinly sliced (the more seeds, the hotter the flavor)

salt, to taste

1 lb chicken cutlets, cut into strips

salt and pepper

2 tbsp olive oil

1/2 cup fresh cilantro, finely chopped

1 1/4 cup sharp white cheddar cheese, shredded

8 x (6 - 7-inch) flour tortillas

1 cup ketchup, preferably Heinz

1/4 cup light brown sugar

1 tbsp Dijon mustard

1 tsp Tabasco sauce

2 tsp apple cider vinegar

3 - 4 x chipotle peppers in adobo sauce, finely chopped, plus 1-2 tablespoons of adobo sauce
