I enjoyed this, I used Dempsters BodyWise multigrain bread kept it very healthy, a nice light but filling dish for sure.. :)

2 tablespoons extra-virgin olive oil

2 large eggs

-- Kosher salt and freshly ground black pepper to taste

2 slices toasted bread, about 1/2-inch thick

1 1/2 tablespoons balsamic vinegar

-- 2 small handfuls of spicy lettuce (such as watercress, arugula or baby red mustard greens)
