Ingredients for 6 servings

1 onion, diced into medium sized chunks

1 butternut squash, cut into bite sized pieces

4 cups low-sodium chicken broth

2-3 boneless, skinless chicken breasts (about 1 lb.), cut into bite sized pieces (chicken thighs work well, too)

Salt and pepper

2-3 tablespoons olive oil

¼ teaspoon coriander

¼ teaspoon cumin
