  • 1/2 tsp ground cayenne pepper
  • 1/2 tsp ground cloves
  • 1 tsp ground paprika
  • 1/3 cup chopped fresh cilantro
  • 2 large onions, finely chopped
  • 6 cloves garlic, minced
  • 2 1/2 lbs lean boneless beef chuck, cut into 1/2 by 2 inch strips
  • 1 (2 inch) piece cinnamon stick
  • 1/4 cup all-purpose flour
  • 2/3 cup water
  • 1/3 cup tomato paste
  • 1 Tbsp ground coriander
  • 1 tsp ground cardamom
  • 1 tsp ground turmeric
  • 3 Tbsps grated fresh ginger
  • 2 Tbsps ground cumin
