Ingredients for 4 servings

1 pound FOR THE SHRIMP --- jumbo shrimp, peeled, deveined and tails cut off

1/3 cup Extra Virgin Olive Oil

3 cloves Garlic, Minced

1/4 cup chopped fresh cilantro, parsley and mint

Kosher salt and freshly ground pepper, to taste

2 tbsp FOR THE CURRY DRESSING --- yogurt, mayonnaise or sour cream

2 tsp Curry Powder

2 cloves Garlic, Minced

juice and zest of 1 lime

2 tbsp finely chopped fresh cilantro

2 tbsp finely chopped fresh mint

5 tbsp Extra Virgin Olive Oil

Kosher salt and freshly ground black pepper, for taste

1 cup Quinoa

2 x large ripe mangoes

1 x Jalapeno, seeded and minced

3 x scallions , thinly sliced

1/2 x Persian cucumber, chopped

1/3 cup Roasted Almonds

1 tbsp finely chopped mint

a handful of fresh spinach leaves
