2 pounds boned, skinned chicken breasts, cut into 1 1/2-in. cubes

1/2 cup chopped fresh cilantro

1/2 cup extra-virgin olive oil, divided

2 tablespoons fresh lime juice

2 teaspoons plus 1 tbsp. minced garlic

1 teaspoon coarse kosher salt

1 teaspoon smoked Spanish paprika (pimenton; see Notes)

1/2 teaspoon freshly ground black pepper

3/4 cup peeled roasted red peppers (canned or fresh)

1/4 cup whole almonds or hazelnuts, toasted

1 slice crusty bread, toasted and cut into cubes

1 tablespoon sherry vinegar

2 bunches green onions, root ends trimmed
