1 x 540g jar of white beans

of pata negra and some

For the chops

400 g Swiss chard stalks

a small handful of raisins

streaky bacon roughly

good quality dry sherry

For the beans

a few sprigs of fresh

pata negra offcuts

and roughly chopped

Spanish extra virgin olive oil

bone in the best quality

sea salt and freshly ground

rosemary leaves picked

or butter beans drained

4 large thick pork chops

chopped or pancetta

1 red onion peeled

or 2 rashers smoked

meat you can afford

1 large red pepper deseeded

a few sprigs of fresh oregano

trimmed fat from a few slices

or marjoram leaves picked

a few fresh bay leaves

approximately 350g each

black pepper

and finely chopped

trimmed or spinach leaves
