1⁄4 cup chopped scallions, (white and light green parts), 3 to 4 medium

3 Tbs. unsalted dry-roasted peanuts, chopped

Lime wedges for garnish

1⁄2 cup natural peanut butter

1⁄3 cup low-fat firm silken tofu

1⁄4 cup low-sodium soy sauce

3 Tbs. fresh lime juice

2 Tbs. light brown sugar

3 medium cloves garlic, minced

3⁄4 tsp. crushed red pepper flakes
