  • 3 slices multigrain bread
  • 3 Tbsps unsalted butter
  • 1 onion, chopped, about 1 cup
  • 2 cups 1% milk
  • 2 Tbsps whole wheat flour
  • 1/2 tsp dried mustard
  • 1/4 tsp salt
  • 1 1/2 cups shredded reduced-fat mozzarella cheese
  • 1 cup shredded reduced-fat sharp cheddar cheese
  • 1/4 cup grated Romano cheese
  • 1 can (14.5 ozs) salt-free diced tomatoes, drained
