1 small eggplant (about 12 oz.), cut into 1-inch cubes

1 red bell pepper, stemmed, seeded, cut into 1-inch pieces

1 yellow bell pepper, stemmed, seeded, cut into 1-inch pieces

1/2 pint cherry tomatoes
