2 pounds ripe tomatoes, or 1 (28-

ounce) can whole plum tomatoes

1/2 cup olive oil

1 medium leek, chopped (white and pale green parts only)

1 onion, chopped

3 garlic cloves, chopped

2 cups chicken or vegetable stock, or canned low-salt broth

20 fresh basil leaves

1/2 pound day-old country-style bread, crusts removed, bread cut into cubes

Salt and freshly ground white pepper to taste

Extra virgin olive oil
