2 medium carrots chopped

4 x garlic cloves thinly sliced

1 2-inch piece ginger, peeled and sliced into thin batons

1 whole cauliflower sliced into 1/2 inch slices

2 x bay leaves

1 bunch thyme springs (5-6 springs) tied with kitchen string

1 tbsp salt

1/2 tbsp black pepper

64 oz low sodium chicken stock

12 oz baby bella mushrooms, sliced in half

1/4 cup fresh parsley chopped

2 tbsp butter

2 tbsp flour

1 cup goat milk (or cow milk)

1/2 cup grated parmesan cheese

1/2 tsp grated nutmeg

1/2 tsp salt

1/4 tsp white pepper
