1 rotisserie leg/thigh combo (I use Costco's rotisserie chicken) cut up into bite size pieces (minus the bones and skin) OR you can use chicken breast strips too
1/2 cup cooked quinoa
1/2 cup black beans
1/4 cup corn
A sprinkle of feta cheese
A handful of any type of lettuce you like (I use romaine)
Annie's Naturals Organic Chile Lime Vinaigrette
Toss together the chicken, quinoa, beans, corn, feta, & lettuce...drizzle with vinaigrette...enjoy!
