  • 5 dried japones or arbol chiles
  • 1/2 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp kosher or sea salt
  • 1 garlic clove, minced
  • 1 Tbsp minced peeled lemongrass
  • 1 Tbsp minced peeled fresh ginger
  • 1 Tbsp minced shallots
  • 3/4 cup light coconut milk
  • 2 Tbsps creamy peanut butter
  • 2 Tbsps palm sugar or light brown sugar
  • 2 Tbsps fresh lime juice
  • 1 Tbsp Thai fish sauce
  • 1 cup light coconut milk
  • 1 Tbsp granulated sugar
  • 3 Tbsps minced shallots
  • 2 Tbsps low-sodium soy sauce
  • 1 tsp ground turmeric
  • 1 1/2 lbs pork tenderloin, trimmed and cut diagonally into thin slices
  • Cooking spray
