1 box short pasta (anything like elbows, cavatappi or pipette will do)

2 tablespoons extra-virgin olive oil (EVOO)

3/4 pound bulk sweet Italian sausage

1 small yellow onion, chopped

4 large cloves garlic, chopped

3 tablespoons flour

1 cup chicken stock

3 cups milk or half-and-half

A pinch of nutmeg (a few passes on the grater)

1 1/2 cups grated Asiago cheese

2 cups grated provolone cheese

2 cups stuffing bread crumbs, recommended brand Pepperidge Farms

1/2 stick, 4 tablespoons butter, melted

1/2 cups grated Parmigiano Reggiano

1/2 cup flat-leaf parsley leaves, chopped, a couple of handfuls
