6 lime leaves , crushed

500.0g mussels , scrubbed

2.0 tbsp fresh lime juice

2 lemon grass , halved and bruised, plus a thumb-size piece ginger, thickly sliced (or galangal if you have it)

2.0 tbsp fish sauce

400.0ml can coconut milk

2 small green chillies , crushed

5 coriander sprigs, leaves and stems separated, plus extra for serving
