Cheesy Stuffed Mushrooms

Ingredients for 8 servings

24 mushrooms

2 garlic clove, minced

handful chopped italian flat leaf parsley

4 oz cream cheese

handful italian blend shredded cheese (mozzarella, romano, parmesan, asiago)

1  shallot, minced

pinch salt and pepper, to taste

Preparation

1.

Remove stems from caps, set stems aside. Rinse out mushroom caps

2.

Soften cream cheese in microwave for 30 sec. Combine with garlic, 3/4 parsley, handful shredded cheese, shallot, salt and pepper

3.

Fill caps with heaping spoonfuls of mixture

4.

Lightly spray baking pan with cooking spray (preferably olive oil). Place caps in baking pan

5.

Sprinkle another handful of cheese generously over mushrooms in pan. Spray lightly with olive oil cooking spray

6.

Bake for 20min at 400 degrees, or until cheese is bubbly and lightly browned

7.

Sprinkle hot mushrooms with remaining parsley and serve
