3/4 lb beef bones

6 cups water , (more if needed)

2-1/4 pound bison sirloin strip steak , (Canadian feature)

1 bottle Sleemans Honey Brown Lager

1/2 cup packed white flour

2 tsp freshly ground coriander , (see tip in method)

2 tsp sea salt

2 tsp freshly ground cumin , (see tip in method)

1/2 tsp freshly ground black peppercorns , (use pepper mill)

1/4 tsp ground allspice

4 tbsp canola oil , (more or less)

1-1/2 cups diced onions

3-1/2 tbsp freshly minced garlic

1-1/2 tbsp freshly minced ginger

1 can (796 mL) Aylmer Diced Tomatoes , drained (Canadian feature)

1 tbsp white flour

1 tsp ground turmeric

1-1/4 cup beef broth , (homemade)

4 large carrots , (9-10 inches long)

8 cracked open cardamom pods , discard pods, reserve seeds

1 can coconut milk , Aroy-D

1/4 inch cinnamon sticks , broken in half

2 bay leaves

3 tbsp finely chopped fresh cilantro , (garnish optional)

2 cups white basmati rice , rinsed in cold water and drained

2 cups beef broth , any combo, total volume is 2 cups

1 tsp canola oil
