2 tbsp chopped fresh parsley

3 lb centre-cut boneless single pork loin roasts

1 tbsp canola oil

1-1/2 tsp all-purpose flour

1-1/2 tsp butter , softened

4 shallots , minced

2 cloves garlic , minced

1 cup Reisling or other white wine

1 cup chicken stock , (preferably sodium-reduced)

1/4 tsp pepper
