April, matsutake mushrooms benefit from a cooking method that preserves their aroma. Frying does work well and also steaming, thickly-cut in foil.

The recipe calls for enoki and shiitake recipes (both of which I love), but not matsutake. Treat them the same? I seem to recall a Top chef finale with matsutake mushrooms that presented some difficulty for the competitors. The most successful fried them if memory serves correctly.
