large bunch kale, stemmed and coarsely chopped

1 tablespoon olive oil

1 large onion, diced

1 cup vegetable broth

1/8 teaspoon fresh nutmeg

salt and fresh black pepper to taste

1/2 cup sharp Irish cheddar (optional)
