I made this a little differently than it called for... I used a sandwich round in a circular glass baking dish (I was cooking for 1). The egg took a lot longer to cook all the way through and it was kind of tough. I really liked the tomato mixture. I would make it again but I would have to work on perfecting it.

Ingredients for 6 servings

2-3 tbsp Extra Virgin Olive Oil

3 big pinch Ground Cumin

2 big pinch Chili Flakes

2 big pinch Smoked Paprika

2 big pinch fine sea salt

1 cup Spring Onion, chopped

1 x Clove Garlic, chopped

1 cup Cherry Tomatoes, halved or quartered

2 pieces Pita Bread cut into quarteres

6 large Organic eggs

Garnish: finely chopped tomatoes, chile flakes, cilantro (optional)
