This soup is absolutely positively AMAZING. I mean truly. You could probably replace the butter with olive oil, but why the heck would you??? It also freezes very well.

Ingredients for 6 servings

1/2 teaspoon paprika

1/2 teaspoon ground black pepper

1/2 cup red lentils

1 apple, peeled, cored and chopped

4 cups vegetable broth

1 teaspoon salt

1/2 teaspoon minced fresh ginger

3 large carrots, peeled and chopped

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1/4 cup butter

1 onion, chopped

2 large sweet potatoes, peeled and chopped
