  • 2 medium red onions, peeled and thinly sliced
  • 1/2 cup rice wine vinegar
  • 6 (4 to 5-oz) salmon fillets
  • 1 tsp kosher salt
  • 1/2 cup panko bread crumbs
  • 1/4 cup water
  • 1 tsp ground ginger
  • 1/4 cup red wine vinegar
  • Salt and freshly ground black pepper
  • 2 Tbsps chives, chopped, for garnish
  • 2 Tbsps grapeseed oil
  • 1/4 cup peeled and chopped fresh ginger
  • 1/2 cup white balsamic vinegar
  • 1 Tbsp wasabi paste
  • 1 1/2 Tbsps granulated sugar
