2 celery ribs, finely chopped

1 medium onion, minced

1 pound navy or Great Northern beans, picked over and rinsed

8 cups chicken stock or canned low-sodium broth

4 medium tomatoes, seeded and coarsely chopped

1/2 cup ketchup

1/4 cup light brown sugar

3 tablespoons white vinegar

2 tablespoons Dijon mustard

2 tablespoons chopped basil

1 1/2 tablespoons minced rosemary

2 teaspoons ground cumin

1 teaspoon sweet paprika

Salt and freshly ground pepper

1 tablespoon unsalted butter, plus more for spreading

1/2 pound each knockwurst and weisswurst, halved lengthwise

1/2 pound Italian sausage, cooked and halved lengthwise

Six 1/2-inch-thick slices Italian bread, crusts removed

1 1/2 ounces sharp Cheddar cheese, grated
