Made this as main dish for vegetarians on Christmas and it was a big hit. Pretty simple and delish.

Ingredients

2 cups cauliflower florets

3 cups diced butternut squash

1 teaspoon harissa, or more to taste

1 teaspoon salt, plus more to taste

4 tablespoons olive oil

1 teaspoon honey

1 tablespoon sherry or red wine vinegar

2 cups cooked du puy (French) lentils at room temperature

3 tablespoons finely chopped red onion

1 1/2 tablespoon capers

3 tablespoons sliced olives, green or black oil-cured

2 tablespoons minced parsley

1/2 lemon, juiced, or more to taste
