Ingredients for 6 servings

1 cup shredded unsweetened coconut

1 cup 2% low-fat milk

For the chicken

1 cup diced peeled and seeded papaya

1 cup diced peeled and cored pineapple

1 jalapeno or other hot pepper, seeded and diced

1 cup diced peeled mango

1/4 cup all-purpose flour (for dredging)

salt & freshly ground black pepper

2 medium eggs , beaten

1/4 cup chopped cilantro

2 tablespoons butter

fresh lime juice

1 teaspoon sugar

1 tablespoon light rum (optional)

For the salsa

6 boneless skinless chicken breast halves (about 3 lbs, pounded to a thickness of about 1/2 inch)
