Ingredients for 2 servings

2 x chicken legs, cut into thigh and drumstick

2 medium carrots, peeled and cut into 2 inch pieces

2 medium zucchini, cut into 2 inch long pieces

1 large green or red bell pepper, cut into 2 inch long pieces

1 x whole preserved lemon, rinsed well, pulp and pith removed, sliced into strips or diced

2 tbsp ginger

1 tbsp Coriander

1 tbsp Cumin

1 tsp cumin seeds (optional)

2 x cloves garlic, minced

1 x Juice of lemon

1/2 cup olive oil

Black pepper to taste
