2 large cloves garlic, finely minced

1 medium red onion, finely diced

1 large red bell pepper, finely diced

1 large zucchini, cubed

1 small butternut squash – peeled, deseeded and cut into small cubes

1 large sweet potato, peeled and cut into small cubes

6 cups vegetable stock

28 ounces good quality chopped tomatoes

1 cup fresh frozen peas

1 tablespoon dried oregano

1/2 cup small dried pasta shapes – stars/orzo/ditalini (optional)
