1/4 cup sesame seed

8 ounces soba noodles

2 tablespoons mirin (rice wine)

2 tablespoons soy sauce

2 medium scallions , trimmed and sliced thin on bias

1/2 cup bean sprouts

3 medium radishes , cut into 1/8 inch rounds and then into 1/8 inch strips

1 teaspoon salt

2 teaspoons rice vinegar

2 tablespoons vegetable oil
