Ingredients for 12 servings

Freshly ground black pepper

1 medium cucumber, thinly sliced

1/2 teaspoon yellow mustard

3 tablespoons salt

1/4 cup finely chopped sweet pickles

4 lemons, halved

2 1/2 cups mayonnaise

1 onions, thinly sliced

1/4 cup minced onions

1/2 gallon water

2 tablespoons finely chopped fresh parsley leaves

2 dozen (2-inch squares) of dark pumpernickel bread

1 cup fresh parsley sprigs

1 1/2 pounds white potatoes, peeled, cubed, cooked until tender and cooled completely

1 whole salmon, (about 6 to 8 pounds) scaled and gutted
