  • 1 three-inch piece fresh ginger, peeled and cut into 1/8-inch-thick matchsticks (1/2 cup)
  • 2 Tbsps canola oil
  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1 1/2-inch chunks
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 Tbsps white vinegar
  • 2 Tbsps sugar
  • 1/2 cup sliced scallions
