1 teaspoon pure vanilla extract

1 cup all-purpose flour

1/2 cup whole-wheat flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

3 cups rolled oats

1 cup raisins (or combination of raisins and dried cranberries)

1/2 cup sunflower seeds

1 cup unsweetened dried coconut

1 cup chopped nuts or chocolate chips, or a combination, optional (I skipped this)
