Salt and pepper

2 tablespoons extra-virgin olive oil (EVOO)

2 tablespoons butter

2 parsnips, peeled and chopped

1 onion, chopped

1 tart apple, peeled and chopped

1/2 cup dried apricots, chopped

1/4 cup dried cranberries

1/4 cup dark or golden raisins

2 tablespoons white balsamic vinegar or cider vinegar

1 1-inch piece fresh ginger, grated or finely chopped

1 teaspoon ground cumin

1 teaspoon ground allspice

1/4 teaspoon ground cinnamon

1 cup chicken stock

1/3 cup apricot preserves

2 tablespoons grainy mustard

Crusty whole grain bread, for mopping
