1/4 pound Canadian bacon, cut into 1/4-inch dice

1/2 cup pecans, toasted and roughly chopped

1/4 cup dried cherries or cranberries

1 cup whole mushrooms, cut (about 1/2 cup when chopped)

2 stalks celery, cut into 1/4-inch dice

1 crisp apple (such as Macoun, Gala, Braeburn), peeled, cored and cut into 1/2-inch dice

1 tablespoon olive oil

2 1/2 cups chicken stock

1 shallot, minced

1 clove garlic, minced

1 1/2 tablespoons fresh sage

salt and pepper, to taste
