4 cups fresh raspberries

1 teaspoon grated lemon peel

1/2 cup unsalted butter , melted and cooled (1 stick)

1-2 tablespoon lemon peel , finely minced

1/2 cup chilled unsalted butter , cut into 1/2 inch pieces (1 stick)

7 tablespoons fresh lemon juice

3 tablespoons chilled vegetable shortening

2 cups all-purpose flour

2-4 tablespoons ice water

1 tablespoon cognac

Lemon Filling

1 pinch salt

2 tablespoons sugar

2 egg yolks, room temperature, beaten to blend

3 extra-large eggs , room temperature, beaten to blend
