  • 1/4 tsp cayenne pepper (more or less to taste)
  • 1/4 tsp baking powder
  • 1 lb (about 3 medium) onions, halved and very thinly sliced
  • 1/2 cup minced fresh parsley, cilantro, or fenugreek leaves
  • 2 large eggs, lightly beaten
  • Canola oil, for shallow frying
