Ingredients for 8 servings

1 cup uncooked quinoa, rinsed

2 cup water

1 lb extra lean ground turkey

1 tbsp olive oil

1 onion, chopped

4 cloves garlic, minced

1 jalapeno papper, seeded and minced

1 tbsp chili powder

1 tbsp ground cumin

1 (28 oz) can crushed tomatoes

1 (19 oz) can kidney beans, rinsed and drained

1 (19 oz) can black beans, rinsed and drained

1 red bell pepper, chopped

1 zucchini, chopped (optional)

1 tsp dried oregano leaves

1 tsp dried parsley

1 cup frozen corn kernels, thawed

1/4 cup chopped fresh cilantro

salt and ground black pepper to taste

Preparation

Brown turkey in a pan

Add all ingredients to a crockpot

3.

Cook on low 6-8 hours
