4.0 tbsp double cream

1 bay leaf

about 6 baby courgettes

2 large Little Gem lettuces , leaves separated

3 sprigs fresh thyme

6 tbsp vinaigrette , preferably homemade

1 carrot , roughly chopped

parmesan shavings, to serve

4 large sprigs fresh rosemary

1 onion , quartered

2.0 tbsp fresh lemon juice

1 medium fennel bulb , stalks trimmed and reserved
