Ingredients for 6 servings

1 3lb chicken

2 tbsps butter

1 tbsp olive oil

1 yellow onion

2 stalks celery

1 onion

1 bay leaf

64 oz chicken broth

1 tsp kosher salt

dash pepper

1 cup egg noodles

sprinkle parmesan cheese

Preparation

1.

Remove all the meat from a roast chicken if you prefer you can start with an organic, uncooked chicken and go through the same steps

2.

Add 2 tablespoons butter and 1 tablespoon olive oil to a large stock pot

3.

Add chopped carrots, celery and yellow onion and simmer for four minutes. (optional reserve and add some of the celery leaves for flavor)

4.

Add chicken meat and bay leaf

5.

Pour in chicken broth

6.

Add 1 teaspoon kosher salt and freshly ground pepper to taste

7.

Bring contents to a boil. turn down and let simmer for at least one hour (the longer the bette) When you are 15 minutes away from serving add 1 cup egg noodles or any you'd like and continue to simmer

8.

At salt-and-pepper and season to taste

9.

Serve with a sprinkle of freshly ground Parmesan cheese
